I've got the best dad in the world

My dad is the most patient man I know and I love him for that.  He's also the best bug killer in the world!  Thanks dad for loving me, guiding me, and protecting me from all the evil bugs that want to attack me!  I love you.


Today, he taught me to make his pinakbet.  One of my favorite Filipino dishes.  We made this together for my father-in-law.  He LOVES this stuff.  It really is a simple dish to make and is generally healthy (minus the chicharon!, but who doesn't love a little pig once in a while).  Hopefully I'll be able to make this dish on my own one day... but for now, Dad will always make the best pinakbet ever!

1. basic ingredients; tomato, ginger, onion, eggplant, long beans, garlic, okra, chicharon  2.  Fish sauce! (bagaoong)  3.  Brown the garlic.  4. Add tomatoes, onions, and chicharon.  Make chicharon CRISPY!  5. Add eggplant and okra.  6. Add long beans and fish sauce.  7.  Cover and let simmer.  Toss and take a peek.  8.  When vegetables are tender, it's done.  Adjust taste with salt or more fish sauce.  Plate and enjoy!

This was such a sweet post. The photo of you two is amazing.
My mom was better with making Filipino dishes, but my dad could hold his own in the kitchen too. But one of my favorite dishes he made was one he invented one day when I was a kid: "tubesticks ala pasta" which is just hotdogs with ramen noodles (without the soup mix) and soy sauce and parmesan cheese. It sounds so weird, but I still make my ramen noodles like that now.Comfort food!

You MUST post a detailed recipe of that dish. Looks so good! I'm not worried about the pork, I'm more worried about the sodium overdose from that fish sauce :p hahaha...

as a child i have always loved fried lumpia...or spring rolls..hehe. and we used to go to dimsum or lumpia house every sunday...my dad finally learned how to make really yummy ones and made them for me...as i grew up, he taught me how to make them.
